Now that we have all survived the whirlwind of October and Halloween...what are we going to do with all that candy?!? I don't know about your kiddos, but after a few days, the fun of the Halloween candy stash kinda wears off! This year, I decided to take some candy from each of my kids and use it as tribute for my new favorite Halloween tradition!
Ingredients:
- 1 cup of unsalted butter
- 3/4 cup of granulated sugar or sugar substitute
- 3/4 brown sugar or brown sugar substitute.
- 2 tsp vanilla extract
- 2 eggs
- 2 1/4 cups of all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups of chopped Halloween candy
- 1/2 cup of chocolate chips
- 1/4 cup of chopped pretzel sticks
- Sea Salt to top (optional)
Directions:
- Preheat your oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In a saucepan, melt your butter over medium heat (approx. 5 minutes). Stir occasionally, until brown specks start to appear. Remove from the heat, and let it cool.
- While butter is browning, chop your candy and pretzel sticks, then, set aside.
- Add in optional chocolate chips.
- Combine browned butter, sugar, and brown sugar in a stand mixer and mix until light and fluffy.
- Add in eggs, one at a time.
- Add in the vanilla.
- Mix in flour, baking soda, and salt.
- Stir until dough forms.
- Add candy and chocolate chips to dough, but don't overmix.
- Chill dough in fridge for at least 30 minutes.
- Remove chilled dough and let it sit for 5 minutes to make it easier to scoop.
- Scoop dough onto baking sheet.
- Bake for 12 minutes.
- Allow to cool some, then transfer to cookie racks.
- Top with optional sea salt.
- Enjoy!
Tips:
- While you are browning the butter, you will notice a nutty smell. This is totally normal!
- We used sugar-free chocolate chips...I know it's kinda ironic!
- We prefer monk fruit sugar for our sugar substitute!
- I did change my mixer attachment to the dough hook to prevent overmixing the dough!
My kids and I really enjoyed making these cookies! We were able to use up a good bit of Halloween candy and make a fun and yummy treat!
