Ingredients:
- 2 cups hash brown rounds
- 6 eggs
- 1/2 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1 tsp pepper
- 1 cup southern style chicken nuggets
Directions:
- Spray a pie dish with cooking spray and preheat oven to 400 degrees.
- Add hash browns to bottom on the dish and bake 15 minutes.
- Cook chicken nuggets while hash browns bake.
- Combine eggs, cheese, cottage cheese, salt, and pepper in a bowl.
- Chop chicken nuggets.
- Remove hash browns from oven and mash into an even layer covering the sides and bottom of the pie dish.
- Reduce oven temperature to 350 degrees.
- Pour egg mixture over the hash browns and bake for 35 minutes.
- Serve & Enjoy!
Notes:
- This is such a fun recipe that you can customize! We opted to use southern style chicken nuggets, think your favorite fast food chicken joint that is closed once a week! However, you can use bacon or sausage instead! You could also add veggies and change the cheese to suit your preference!
